Slider: Proaim - https://amzn.to/31Wocs4 Edit: Adobe Premiere Pro CC -------------------------------------------------------------------- CUISINE: GUJARATI PREP TIME: 10 MINUTES COOK TIME: 10 MINUTES SERVINGS: 16 PIECES INGREDIENTS FOR BATTER: 1 cup Gram flour / Besan 1 cup curd ¼ tsp salt 2 green chili (finely chopped) ¼ cup or 50ml water 1 tbsp Olive Oil or any other oil 1 tsp paste of ginger 1 tsp sugar 1 tbsp lime juice 1/8 tsp turmeric powder / haldi 1 tsp ENO fruit salt(combination Baking Soda (Sodium bicarbonate) and Citric Acid) FOR SEASONING: 1 tbsp Olive Oil or any other oil 1 tsp Mustard Seed 10 Curry Leaves 4 green chili (sliced and deseeded) 2 tsp sugar 3 tbsp water FOR GARNISHING: 2 tbsp grated coconut 1 tbsp coriander leaves (roughly chopped) Process: Step 1 In a mixing bowl, add Gram Flour, Curd, Ginger, Salt, Turmeric powder, Green Chili, Sugar and Oil. Mix well until we'll get a smooth lump free mixture (mix for about 2 mins). Step 2 Grease the dish/pan with butter or oil so that the Dhokla does not stick to the bottom or any corner of the dish. Step 3 Add the ENO (Citric acid salt/fruit salt) in the batter and mix gently till the batter turns frothy and light. After mixing immediately transfer the batter into the greased pan (fill up only 75% height of the pan). Now we'll cook the Dhokla in microwave oven. Step 4 Microwave it at 60% power for 7-8 mins or until a toothpick inserted comes out clean. Step 5 Once done, cool it and cut it into square pieces (approximately 2x2 Inch). For Making Dhokla Seasoning: Step 6 Heat 1 tbsp Olive Oil in a small pan on mid flame for 30 seconds (oil tempetrature 170 deg.C - approx) . Add Mustard seeds and wait for another 30 seconds. Step 7 Add Green chili, Curry Leaves, water & sugar and let it cook for about 3 mins. Step 8 Spread the Seasoning evenly all over the pieces such that each piece gets to taste the seasoning and gets fluffy. Step 9 Wait for 10 more mins to moist the internal portions of Dhokla pieces. Step 10 Sprinkle grated coconut and coriander to the top & enjoy with tea or green chutney!
